Decadent Peanut Butter and Chocolate Bliss Bars

Ingredients:

  • 1 cup creamy peanut butter
  • 1/2 cup honey or maple syrup
  • 1/2 cup coconut oil, melted
  • 2 cups rolled oats
  • 1 cup semisweet chocolate chips
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Line a square baking dish with parchment paper, leaving some overhang on the sides for easy removal later.
  2. In a microwave-safe bowl or on the stove, melt together the peanut butter, honey (or maple syrup), and coconut oil until smooth. Stir well to combine.
  3. Remove from heat and stir in the vanilla extract and a pinch of salt.
  4. Add the rolled oats to the peanut butter mixture and mix until well combined.
  5. Pour half of the mixture into the prepared baking dish and spread it out evenly, pressing it down firmly.
  6. In a separate bowl, melt the chocolate chips either in the microwave or on the stove until smooth.
  7. Pour the melted chocolate over the oat mixture in the baking dish, spreading it out evenly.
  8. Pour the remaining oat mixture over the chocolate layer and spread it out evenly, pressing down firmly.
  9. Place the baking dish in the refrigerator for at least 2 hours, or until the bars are firm.
  10. Once firm, lift the bars out of the baking dish using the parchment paper overhang and place them on a cutting board. Cut into squares or bars.
  11. Serve and enjoy these decadent peanut butter and chocolate bliss bars! Store any leftovers in an airtight container in the refrigerator for up to a week.
