Decadent Peanut Butter and Chocolate Bliss Bars
Ingredients:
- 1 cup creamy peanut butter
- 1/2 cup honey or maple syrup
- 1/2 cup coconut oil, melted
- 2 cups rolled oats
- 1 cup semisweet chocolate chips
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions:
- Line a square baking dish with parchment paper, leaving some overhang on the sides for easy removal later.
- In a microwave-safe bowl or on the stove, melt together the peanut butter, honey (or maple syrup), and coconut oil until smooth. Stir well to combine.
- Remove from heat and stir in the vanilla extract and a pinch of salt.
- Add the rolled oats to the peanut butter mixture and mix until well combined.
- Pour half of the mixture into the prepared baking dish and spread it out evenly, pressing it down firmly.
- In a separate bowl, melt the chocolate chips either in the microwave or on the stove until smooth.
- Pour the melted chocolate over the oat mixture in the baking dish, spreading it out evenly.
- Pour the remaining oat mixture over the chocolate layer and spread it out evenly, pressing down firmly.
- Place the baking dish in the refrigerator for at least 2 hours, or until the bars are firm.
- Once firm, lift the bars out of the baking dish using the parchment paper overhang and place them on a cutting board. Cut into squares or bars.
- Serve and enjoy these decadent peanut butter and chocolate bliss bars! Store any leftovers in an airtight container in the refrigerator for up to a week.
