Custard Filled Pastries Recipe

Here’s a delicious recipe for custard-filled pastries that you can enjoy! These pastries feature a flaky crust and a creamy custard filling.

Ingredients

For the Pastry:

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 teaspoon salt
  • 1/4 cup sugar
  • 1/4 cup cold water

For the Custard Filling:

  • 2 cups whole milk
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter

Instructions

Make the Pastry:

  1. Prepare the Dough:
    • In a mixing bowl, combine flour, salt, and sugar.
    • Add cold, cubed butter and mix until the mixture resembles coarse crumbs.
    • Gradually add cold water, mixing until the dough comes together. Do not overmix.
  2. Chill the Dough:
    • Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Make the Custard Filling:

  1. Cook the Custard:
    • In a saucepan, heat the milk over medium heat until it begins to steam (do not boil).
    • In a separate bowl, whisk together sugar, cornstarch, and egg yolks.
    • Slowly pour the hot milk into the egg mixture, whisking constantly to temper the eggs.
    • Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens (about 5-7 minutes).
    • Remove from heat and stir in vanilla extract and butter until smooth.
    • Let it cool, then refrigerate until ready to use.

Assemble the Pastries:

  1. Roll Out the Dough:
    • Preheat your oven to 375°F (190°C).
    • On a floured surface, roll out the chilled dough to about 1/8 inch thick.
    • Cut into squares or circles, depending on your preference.
  2. Fill and Bake:
    • Place a small spoonful of custard in the center of each pastry piece.
    • Fold over the pastry and seal the edges with a fork or by crimping them with your fingers.
    • Place the pastries on a baking sheet lined with parchment paper.
    • Optional: Brush the tops with an egg wash (1 beaten egg with a splash of water) for a golden finish.
  3. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until golden brown.
  4. Cool and Serve:
    • Let the pastries cool on a wire rack before serving. Dust with powdered sugar if desired.
