Custard Filled Pancakes Recipe

Ingredients

For the Pancakes:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk
  • 1/4 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

For the Custard Filling:

  • 2 cups whole milk
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 2 teaspoons vanilla extract
  • 1 tablespoon butter

Instructions

Prepare the Custard:

  1. In a medium saucepan, heat the milk over medium heat until it begins to simmer. Do not let it boil.
  2. In a separate bowl, whisk together the sugar, cornstarch, and egg yolks until smooth.
  3. Slowly pour the hot milk into the egg mixture, whisking constantly to prevent the eggs from cooking.
  4. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and starts to bubble.
  5. Remove from heat and stir in the vanilla extract and butter until smooth.
  6. Transfer the custard to a bowl, cover with plastic wrap directly on the surface to prevent a skin from forming, and let it cool completely.

Prepare the Pancakes:

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine the buttermilk, milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter should be slightly lumpy.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown and cooked through.
  6. Remove the pancakes from the skillet and let them cool slightly.

Assemble the Custard Filled Pancakes:

  1. Once the pancakes and custard are both cooled, take one pancake and place a spoonful of custard in the center.
  2. Place another pancake on top to sandwich the custard.
  3. Gently press the edges to seal the custard inside, if necessary.
  4. Repeat with the remaining pancakes and custard.

Serving:

  • Dust the pancakes with powdered sugar, drizzle with maple syrup, or top with fresh fruits if desired.
