Custard Filled Pancakes Recipe
Ingredients
For the Pancakes:
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup buttermilk
- 1/4 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
For the Custard Filling:
- 2 cups whole milk
- 1/2 cup sugar
- 1/4 cup cornstarch
- 4 large egg yolks
- 2 teaspoons vanilla extract
- 1 tablespoon butter
Instructions
Prepare the Custard:
- In a medium saucepan, heat the milk over medium heat until it begins to simmer. Do not let it boil.
- In a separate bowl, whisk together the sugar, cornstarch, and egg yolks until smooth.
- Slowly pour the hot milk into the egg mixture, whisking constantly to prevent the eggs from cooking.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and starts to bubble.
- Remove from heat and stir in the vanilla extract and butter until smooth.
- Transfer the custard to a bowl, cover with plastic wrap directly on the surface to prevent a skin from forming, and let it cool completely.
Prepare the Pancakes:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine the buttermilk, milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter should be slightly lumpy.
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown and cooked through.
- Remove the pancakes from the skillet and let them cool slightly.
Assemble the Custard Filled Pancakes:
- Once the pancakes and custard are both cooled, take one pancake and place a spoonful of custard in the center.
- Place another pancake on top to sandwich the custard.
- Gently press the edges to seal the custard inside, if necessary.
- Repeat with the remaining pancakes and custard.
Serving:
- Dust the pancakes with powdered sugar, drizzle with maple syrup, or top with fresh fruits if desired.
