Cucumbers, Onions, and Tomatoes

Here’s a simple and refreshing Cucumber, Onion, and Tomato Salad recipe. It’s perfect as a side dish for summer meals or a healthy snack.

Ingredients:

  • 2 medium cucumbers
  • 1 large red onion (or white onion, if you prefer)
  • 2 large tomatoes
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar (or lemon juice for a milder flavor)
  • Salt and pepper to taste
  • 1 teaspoon dried oregano (optional)
  • Fresh parsley or cilantro for garnish (optional)

Instructions:

  1. Prepare the Vegetables:
    • Cucumbers: Peel the cucumbers (optional) and slice them into thin rounds or half-moons, depending on your preference.
    • Onions: Peel the onion and slice it into thin rings or half-moons. If the onion flavor is too strong, soak the slices in cold water for 10 minutes to mellow it out.
    • Tomatoes: Wash the tomatoes, remove the stem, and cut them into wedges or cubes.
  2. Make the Dressing:
    • In a small bowl, whisk together the olive oil, red wine vinegar (or lemon juice), salt, pepper, and oregano (if using). Taste and adjust seasoning if needed.
  3. Assemble the Salad:
    • In a large bowl, combine the cucumbers, onions, and tomatoes.
    • Pour the dressing over the vegetables and toss gently to coat all ingredients.
  4. Garnish and Serve:
    • If desired, garnish with chopped fresh parsley or cilantro for added freshness.
    • Serve immediately, or let it sit for 15-20 minutes to allow the flavors to meld.

Tips:

  • You can also add feta cheese or olives for extra flavor.
  • For a crunchier version, try adding bell peppers or a sprinkle of seeds (like sunflower seeds).
  • This salad can be refrigerated for a few hours, but it’s best enjoyed fresh.
