Cucumber Salad

Here’s a simple and refreshing cucumber salad recipe:

Ingredients:

  • 2 large cucumbers, thinly sliced
  • 1 small red onion, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 1/4 cup white vinegar
  • 1/4 cup water
  • 2 tablespoons sugar
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  1. Prepare the Cucumbers and Onion:
    • Thinly slice the cucumbers and red onion. You can use a mandoline slicer for even slices.
  2. Mix the Vegetables:
    • In a large bowl, combine the sliced cucumbers, red onion, and chopped dill.
  3. Prepare the Dressing:
    • In a small bowl, whisk together the white vinegar, water, sugar, olive oil, salt, and pepper until the sugar is dissolved.
  4. Combine:
    • Pour the dressing over the cucumber mixture and toss to coat everything evenly.
  5. Chill:
    • Cover the bowl and refrigerate the salad for at least 1 hour to let the flavors meld. For best results, let it sit for 2-3 hours.
  6. Serve:
    • Give the salad a good toss before serving to make sure the dressing is well distributed. Enjoy!

Optional Additions:

  • Tomatoes: Add some cherry or grape tomatoes for a burst of color and flavor.
  • Feta Cheese: Sprinkle some crumbled feta on top for a creamy, tangy touch.
  • Garlic: Add a minced clove of garlic to the dressing for extra flavor.

This cucumber salad is perfect for a light lunch, a side dish for grilled meats, or a refreshing snack. Enjoy!
