Crustless Spinach Quiche

Certainly! Here’s a simple recipe for a crustless spinach quiche:

Ingredients:

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups fresh spinach leaves, chopped
  • 6 large eggs
  • 1 cup milk (or substitute with almond milk for lactose-free option)
  • 1 cup shredded cheese (such as cheddar, mozzarella, or Swiss)
  • Salt and pepper to taste
  • Optional: pinch of nutmeg or cayenne pepper for added flavor

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish with non-stick spray or butter.
  2. In a skillet, heat olive oil over medium heat. Add chopped onions and garlic, and sauté until onions are translucent, about 3-4 minutes.
  3. Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
  4. In a mixing bowl, beat the eggs. Stir in milk and shredded cheese. Season with salt, pepper, and any optional spices you desire.
  5. Add the spinach mixture to the egg mixture and stir until well combined.
  6. Pour the mixture into the prepared pie dish.
  7. Bake in the preheated oven for 25-30 minutes, or until the quiche is set and the top is golden brown.
  8. Remove from the oven and let it cool for a few minutes before slicing and serving.
