Crunchy Parmesan Potato Bites are a delicious and easy-to-make snack or side dish! Here’s a simple recipe to make them:

Ingredients:

  • 4 large potatoes (preferably russet or Yukon Gold)
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (panko or regular)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp paprika (optional)
  • Salt and pepper to taste
  • Fresh parsley (for garnish, optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

  2. Prepare Potatoes: Wash and peel the potatoes (or leave the skin on for extra texture). Cut them into small, bite-sized cubes (about 1-inch pieces).

  3. Boil Potatoes: Place the potato cubes in a pot of salted water and bring it to a boil. Cook for about 8-10 minutes, or until the potatoes are just fork-tender but not falling apart. Drain and set them aside.

  4. Make Coating Mixture: In a large bowl, combine the grated Parmesan, breadcrumbs, garlic powder, paprika, salt, and pepper.

  5. Toss Potatoes: Drizzle olive oil over the boiled potatoes and toss them gently to coat. Then, add the coated potatoes into the Parmesan mixture and toss again until all pieces are evenly coated.

  6. Bake: Arrange the coated potato cubes on the prepared baking sheet in a single layer. Bake in the preheated oven for 20-25 minutes, or until they are golden brown and crispy, flipping halfway through to ensure even crispness.

  7. Serve: Remove from the oven and garnish with fresh parsley if desired. Serve immediately with your favorite dipping sauce, like marinara or ranch.
