Crunchwrap Casserole Recipe

Sure, here’s a simple recipe for a Crunchwrap Casserole:

Ingredients:

  • 1 pound ground beef (you can also use ground turkey or chicken)
  • 1 packet taco seasoning mix
  • 1 cup water
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1 cup diced red onions
  • 1 cup diced bell peppers (any color)
  • 1 cup sour cream
  • 1 cup guacamole
  • 6 large flour tortillas
  • Cooking spray

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium-high heat. Drain any excess fat.
  3. Add the taco seasoning mix and water to the skillet with the cooked beef. Mix well and simmer for 5-7 minutes until the mixture thickens. Stir in the black beans and corn, and cook for an additional 2-3 minutes. Remove from heat.
  4. Spray a 9×13-inch baking dish with cooking spray. Place three of the flour tortillas in the bottom of the dish, overlapping slightly.
  5. Spread half of the meat mixture over the tortillas in the baking dish.
  6. Sprinkle half of the shredded cheese over the meat mixture.
  7. Place the remaining three tortillas on top, overlapping slightly.
  8. Spread the remaining meat mixture over the second layer of tortillas.
  9. Sprinkle the remaining shredded cheese on top.
  10. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  11. Remove the casserole from the oven and let it cool for a few minutes.
  12. Top the casserole with diced tomatoes, shredded lettuce, diced red onions, diced bell peppers, dollops of sour cream, and guacamole.
  13. Cut into squares and serve.
