crockpot creamy chicken nachos

Sure! Here’s a recipe for Crockpot Creamy Chicken Nachos:

Ingredients:

  • 1 pound boneless, skinless chicken breasts, diced
  • 1 packet taco seasoning
  • 1 cup chicken broth
  • 1 can (10 ounces) diced tomatoes with green chilies, drained
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (4 ounces) diced green chilies
  • 1 cup frozen corn kernels
  • 1 block (8 ounces) cream cheese, softened
  • 2 cups shredded Mexican blend cheese
  • Tortilla chips, for serving
  • Optional toppings: diced tomatoes, sliced jalapeƱos, sliced black olives, chopped cilantro, sour cream, guacamole

Instructions:

  1. In a crockpot, combine diced chicken, taco seasoning, chicken broth, diced tomatoes with green chilies, black beans, diced green chilies, and frozen corn.
  2. Stir to combine all the ingredients.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  4. Once the chicken is cooked, add the softened cream cheese to the crockpot and stir until it’s fully incorporated into the mixture.
  5. Sprinkle shredded Mexican blend cheese over the top of the mixture in the crockpot.
  6. Cover and cook for an additional 15-20 minutes on low, or until the cheese is melted and bubbly.
  7. To serve, arrange tortilla chips on a serving platter. Spoon the creamy chicken mixture over the top of the chips.
  8. Garnish with your favorite toppings such as diced tomatoes, sliced jalapeƱos, sliced black olives, chopped cilantro, sour cream, or guacamole.
