Here’s a simple recipe for Crock-Pot Stuffed Shells:
Ingredients:
- 1 box (12 ounces) jumbo pasta shells
- 1 pound ground beef or Italian sausage
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 jar (24 ounces) marinara sauce
- 1 container (15 ounces) ricotta cheese
- 1 1/2 cups shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Instructions:
- Cook the jumbo pasta shells according to the package instructions until they are al dente. Drain and set aside to cool.
- In a skillet, cook the ground beef or Italian sausage over medium heat until it’s browned and cooked through. Add the chopped onion and minced garlic, and continue cooking until the onion is soft and translucent. Drain any excess fat.
- In a mixing bowl, combine the cooked meat mixture, ricotta cheese, 1 cup of shredded mozzarella cheese, grated Parmesan cheese, egg, chopped parsley, salt, and pepper. Mix well until all ingredients are thoroughly combined.
- Spread a thin layer of marinara sauce on the bottom of your Crock-Pot slow cooker.
- Stuff each cooked pasta shell with a generous spoonful of the meat and cheese mixture, and place them in the Crock-Pot in a single layer.
- Once all the shells are stuffed and arranged in the Crock-Pot, pour the remaining marinara sauce over the top, covering the shells evenly.
- Sprinkle the remaining 1/2 cup of shredded mozzarella cheese on top of the sauce.
- Cover the Crock-Pot and cook on low heat for 4-5 hours or on high heat for 2-3 hours, or until the cheese is melted and bubbly, and the shells are heated through.
- Once cooked, serve the stuffed shells hot, garnished with additional chopped parsley or grated Parmesan cheese if desired.
