Crispy vegetable rolls

Crispy vegetable rolls are a delicious and healthy appetizer or snack that can be made with a variety of fresh vegetables. Here’s a basic recipe for making them:

Ingredients

For the rolls:

  • 1 cup shredded cabbage
  • 1 cup grated carrots
  • 1 cup bean sprouts
  • 1 bell pepper, thinly sliced
  • 1 cup thinly sliced mushrooms (optional)
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Spring roll wrappers
  • Oil for frying

For the dipping sauce:

  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 1 teaspoon chili flakes (optional)

Instructions

  1. Prepare the Filling:
    • In a large pan, heat a little oil over medium-high heat.
    • Add the garlic and sauté until fragrant.
    • Add the cabbage, carrots, bean sprouts, bell pepper, mushrooms, and green onions.
    • Stir-fry the vegetables until they are tender but still crisp, about 4-5 minutes.
    • Add the soy sauce, oyster sauce (if using), sesame oil, salt, and pepper. Mix well.
    • Remove from heat and let the filling cool.
  2. Assemble the Rolls:
    • Place a spring roll wrapper on a flat surface with one corner pointing towards you (like a diamond shape).
    • Spoon about 2 tablespoons of the vegetable filling onto the lower third of the wrapper.
    • Fold the bottom corner over the filling, then fold in the sides, and roll up tightly. Seal the edge with a little water.
    • Repeat with the remaining wrappers and filling.
  3. Fry the Rolls:
    • Heat oil in a deep pan or fryer to 350°F (175°C).
    • Fry the rolls in batches until they are golden brown and crispy, about 3-4 minutes per batch.
    • Remove and drain on paper towels.
  4. Make the Dipping Sauce:
    • In a small bowl, whisk together the soy sauce, rice vinegar, honey or sugar, sesame oil, grated ginger, garlic, and chili flakes (if using).
  5. Serve:
    • Serve the crispy vegetable rolls hot with the dipping sauce on the side.
