Ingredients
For the rolls:
- 1 cup shredded cabbage
- 1 cup grated carrots
- 1 cup bean sprouts
- 1 bell pepper, thinly sliced
- 1 cup thinly sliced mushrooms (optional)
- 2 green onions, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Spring roll wrappers
- Oil for frying
For the dipping sauce:
- 1/4 cup soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey or sugar
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger
- 1 clove garlic, minced
- 1 teaspoon chili flakes (optional)
Instructions
- Prepare the Filling:
- In a large pan, heat a little oil over medium-high heat.
- Add the garlic and sauté until fragrant.
- Add the cabbage, carrots, bean sprouts, bell pepper, mushrooms, and green onions.
- Stir-fry the vegetables until they are tender but still crisp, about 4-5 minutes.
- Add the soy sauce, oyster sauce (if using), sesame oil, salt, and pepper. Mix well.
- Remove from heat and let the filling cool.
- Assemble the Rolls:
- Place a spring roll wrapper on a flat surface with one corner pointing towards you (like a diamond shape).
- Spoon about 2 tablespoons of the vegetable filling onto the lower third of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides, and roll up tightly. Seal the edge with a little water.
- Repeat with the remaining wrappers and filling.
- Fry the Rolls:
- Heat oil in a deep pan or fryer to 350°F (175°C).
- Fry the rolls in batches until they are golden brown and crispy, about 3-4 minutes per batch.
- Remove and drain on paper towels.
- Make the Dipping Sauce:
- In a small bowl, whisk together the soy sauce, rice vinegar, honey or sugar, sesame oil, grated ginger, garlic, and chili flakes (if using).
- Serve:
- Serve the crispy vegetable rolls hot with the dipping sauce on the side.
