Crispy Garlic Parmesan Potatoes
Ingredients:

1.5 lbs (about 700g) baby potatoes or small Yukon Gold potatoes

3 tbsp olive oil

3 garlic cloves, minced

1/2 tsp salt

1/2 tsp black pepper
-
1/2 tsp paprika (optional)

1/2 tsp dried oregano or thyme

1/3 cup grated Parmesan cheese (fresh is best)

2 tbsp chopped fresh parsley (for garnish)
Instructions:

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil and lightly grease.

Prep the potatoes:
Wash and halve the potatoes (or quarter if large). Pat dry for extra crispiness. -
Make the garlic oil:
In a bowl, combine olive oil, garlic, salt, pepper, paprika, and oregano. -
Coat the potatoes:
Toss the potatoes in the garlic oil mixture until well coated. -
Arrange & top with Parmesan:
Place potatoes cut-side down on the baking sheet. Sprinkle Parmesan evenly over the tops. -
