Crispy Cheesy Potato Patties

Here’s a recipe for Crispy Cheesy Potato Patties:

Ingredients

  • 2 cups mashed potatoes (leftover or freshly made)
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped green onions or chives
  • 1/4 cup all-purpose flour
  • 1 egg, lightly beaten
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon paprika (optional)
  • 1/2 cup breadcrumbs (optional, for extra crispiness)
  • Oil for frying (vegetable, canola, or olive oil)

Instructions

  1. Prepare the Mixture:
    • In a large bowl, combine the mashed potatoes, shredded cheese, Parmesan cheese, green onions, flour, egg, salt, pepper, garlic powder, and paprika. Mix until well combined.
  2. Form the Patties:
    • Take a handful of the mixture and shape it into a patty, about 1/2 inch thick. If desired, coat each patty in breadcrumbs for extra crispiness.
  3. Heat the Oil:
    • In a large skillet, heat enough oil to cover the bottom of the pan over medium-high heat.
  4. Cook the Patties:
    • Once the oil is hot, add the patties to the skillet. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Be careful not to overcrowd the pan; you may need to cook the patties in batches.
  5. Drain and Serve:
    • Remove the patties from the skillet and place them on a paper towel-lined plate to drain any excess oil.
  6. Serve:
    • Serve the crispy cheesy potato patties warm, garnished with extra green onions or chives if desired. They make a great side dish or snack!
