Crispy Cheddar Chicken is a delicious and easy-to-make dish that combines the savory flavor of chicken with a crispy, cheesy coating. Here’s a simple recipe for you:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup crushed cornflakes or breadcrumbs (for a crunchier coating, use cornflakes)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/4 cup butter, melted

Instructions:

  1. Prepare the coating mixture:
    • In a shallow bowl, combine the crushed cornflakes or breadcrumbs, shredded cheddar cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  2. Set up your breading station:
    • Place the flour in a shallow dish, and the beaten eggs in another shallow dish.
  3. Coat the chicken:
    • Dredge each chicken breast first in the flour, then dip it in the beaten eggs, and finally coat it in the cheddar-cornflake mixture, pressing lightly to adhere the coating.
  4. Prepare the baking dish:
    • Preheat your oven to 400°F (200°C).
    • Lightly grease a baking dish or line it with parchment paper.
    • Place the breaded chicken breasts in the prepared dish.
  5. Bake the chicken:
    • Drizzle the melted butter over the chicken breasts to help them crisp up.
    • Bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the coating is golden and crispy.
  6. Serve and enjoy!
    • Let the chicken rest for a few minutes before serving.
    • Serve with your favorite side dishes like mashed potatoes, vegetables, or a salad.
