A crisp cucumber and beetroot salad sounds refreshing and delicious! Here’s a simple recipe you could try:

Ingredients:

  • 1 cucumber, thinly sliced
  • 1 medium beetroot, peeled and grated (or use pre-cooked, ready-to-use beetroot)
  • 1/2 red onion, thinly sliced
  • A handful of fresh parsley or mint, chopped (optional for garnish)
  • A squeeze of fresh lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • A pinch of chili flakes (optional for some heat)
  • 1 tablespoon of apple cider vinegar (optional for extra tang)

Instructions:

  1. Prepare the vegetables: Slice the cucumber thinly, grate the beetroot, and slice the red onion.
  2. Combine the ingredients: In a bowl, combine the cucumber, grated beetroot, and red onion.
  3. Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, vinegar (if using), salt, pepper, and chili flakes (if using).
  4. Toss and serve: Pour the dressing over the salad and toss everything together gently to combine. Garnish with parsley or mint if you like.
