Creamy Salsa Taco Spaghetti Bake

Ingredients:

  • 1 lb (450g) ground beef or turkey
  • 1 packet taco seasoning mix
  • 1 jar (about 16 oz) of your favorite salsa
  • 8 oz (about 225g) cream cheese, softened
  • 1/2 cup (120ml) sour cream
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 8 oz (about 225g) spaghetti, cooked according to package instructions
  • 1 1/2 cups (about 170g) shredded Mexican blend cheese
  • Optional toppings: sliced green onions, chopped fresh cilantro, diced avocado, sour cream

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain any excess fat.
  3. Stir in the taco seasoning mix and cook according to package instructions.
  4. Add the salsa, cream cheese, sour cream, and diced tomatoes with green chilies to the skillet. Stir until the cream cheese is melted and the mixture is well combined.
  5. Add the cooked spaghetti to the skillet and toss until it is evenly coated with the sauce mixture.
  6. Transfer the spaghetti mixture to the prepared baking dish and spread it out evenly.
  7. Sprinkle the shredded cheese over the top of the spaghetti mixture.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Remove the foil and bake for an additional 5 minutes to lightly brown the cheese.
  10. Once done, remove from the oven and let it cool for a few minutes before serving.
  11. Serve hot, topped with your favorite optional toppings such as sliced green onions, chopped fresh cilantro, diced avocado, and sour cream.
