Creamy Rotel Pasta with Ground Beef is a delicious and easy-to-make dish that combines the flavors of Rotel tomatoes, ground beef, and creamy cheese sauce. Here’s a simple recipe for you to try:

Ingredients:

  • 1 pound ground beef
  • 1 can (10 ounces) Rotel tomatoes with green chilies
  • 8 ounces pasta (such as penne or rotini)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup heavy cream
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 2-3 minutes.
  3. Add the minced garlic to the skillet and cook for another minute until fragrant.
  4. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes.
  5. Drain any excess fat from the skillet if necessary.
  6. Stir in the Italian seasoning, salt, and pepper.
  7. Add the Rotel tomatoes with green chilies to the skillet, including the juices. Stir to combine.
  8. Reduce the heat to low and add the cooked pasta to the skillet. Mix well to combine with the beef and tomato mixture.
  9. In a small saucepan, heat the heavy cream over low heat until it starts to simmer.
  10. Slowly add the shredded cheddar and mozzarella cheese to the cream, stirring constantly until the cheese is melted and the sauce is smooth.
  11. Pour the cheese sauce over the pasta mixture in the skillet. Stir well to coat everything evenly.
  12. Allow the mixture to simmer for a few minutes until heated through and the sauce thickens slightly.
  13. Taste and adjust seasoning if necessary.
  14. Serve the Creamy Rotel Pasta with Ground Beef hot, garnished with chopped fresh parsley if desired.
