Creamy Potato Hamburger Soup Recipe

Sure, here’s a simple recipe for creamy potato hamburger soup:

Ingredients:

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups diced potatoes
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional toppings: chopped green onions, bacon bits, additional shredded cheese

Instructions:

  1. In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
  2. Add the diced onion to the pot and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
  3. Stir in the diced potatoes and beef broth. Bring the mixture to a boil, then reduce the heat to low and let it simmer until the potatoes are tender, about 15-20 minutes.
  4. Once the potatoes are cooked, stir in the heavy cream and shredded cheddar cheese until the cheese is melted and the soup is creamy.
  5. Season the soup with salt and pepper to taste. Adjust seasoning as needed.
  6. Serve hot, garnished with chopped green onions, bacon bits, and additional shredded cheese if desired.
