Creamy Potato & Hamburger Soup Made In the Crockpot

Here’s a simple recipe for Creamy Potato & Hamburger Soup made in a crockpot:

Ingredients:

  • 1 pound ground beef
  • 4 cups diced potatoes (about 4 medium potatoes)
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 small onion, diced
  • 4 cups beef broth
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1/4 cup all-purpose flour
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • Optional toppings: chopped green onions, additional shredded cheese, bacon bits

Instructions:

  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat and transfer the beef to your crockpot.
  2. Add diced potatoes, carrots, celery, onion, minced garlic, dried thyme, and dried parsley to the crockpot.
  3. Pour beef broth into the crockpot and season with salt and pepper to taste. Stir to combine all ingredients.
  4. Cover the crockpot and cook on low heat for 6-8 hours or on high heat for 3-4 hours, or until the vegetables are tender.
  5. In a separate bowl, whisk together milk and all-purpose flour until smooth. Pour this mixture into the crockpot and stir well to combine.
  6. Add shredded cheddar cheese to the crockpot and stir until the cheese is melted and the soup is creamy.
  7. Taste and adjust seasoning if necessary.
  8. Serve the soup hot, garnished with chopped green onions, additional shredded cheese, and bacon bits if desired.
