Creamy lemon squares are a delicious and tangy dessert that combines a buttery crust with a smooth and creamy lemon filling. Here’s a simple recipe for you to try:

Ingredients:

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar

For the Filling:

  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 2 large eggs
  • 2 tablespoons lemon zest (about 2 lemons)
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • Powdered sugar for dusting (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch (23×23 cm) baking pan.
  2. In a medium bowl, mix together the flour, softened butter, and powdered sugar until well combined. Press the mixture into the bottom of the prepared baking pan to form the crust.
  3. Bake the crust in the preheated oven for about 15-18 minutes or until it’s lightly golden. Remove from the oven and allow it to cool slightly.
  4. In another bowl, whisk together the granulated sugar, flour, baking powder, and a pinch of salt.
  5. Add the eggs to the sugar mixture and whisk until smooth.
  6. Stir in the lemon zest and lemon juice until well combined.
  7. Pour the lemon filling over the baked crust.
  8. Bake in the oven for an additional 20-25 minutes or until the edges are set and the center is slightly jiggly.
  9. Allow the lemon squares to cool completely in the pan. Once cooled, refrigerate for at least 2 hours or overnight to allow the filling to set.
  10. Once chilled, cut into squares. Dust with powdered sugar before serving if desired.
