🍝 Creamy Garlic Butter Salmon Pasta

🕒 Ready in 30 minutes | Serves 2-3

🧄 Ingredients:

For the salmon:

  • 2 salmon fillets (skinless)

  • Salt & pepper

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 2 cloves garlic, minced

  • Juice of half a lemon

For the sauce & pasta:

  • 8 oz (225g) pasta (linguine, fettuccine, or spaghetti works well)

  • 2 tbsp butter

  • 4 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup grated parmesan cheese

  • 1 tsp Italian seasoning (optional)

  • ½ tsp crushed red pepper flakes (optional)

  • Salt & pepper to taste

  • ½ cup pasta water (reserved)

  • Fresh parsley, chopped (for garnish)

  • Extra lemon wedges (for serving)

👩‍🍳 Instructions:

  1. Cook pasta in salted water until al dente. Reserve ½ cup of pasta water, then drain and set aside.

  2. Sear the salmon:

    • Season salmon with salt and pepper.

    • In a large skillet over medium-high heat, heat olive oil and 1 tbsp butter.

    • Add salmon fillets and sear for 3–4 minutes per side, or until golden and cooked through.

    • During the last minute, toss in 2 cloves of minced garlic and the lemon juice.

    • Remove salmon, flake into large chunks, and set aside.

  3. Make the sauce:

    • In the same skillet, lower heat to medium and melt 2 tbsp butter.

    • Add remaining garlic and sauté for about 1 minute until fragrant.

    • Stir in the cream, parmesan, Italian seasoning, and red pepper flakes.

    • Simmer 2–3 minutes until slightly thickened.

  4. Combine:

    • Add the drained pasta to the sauce. Toss to coat, adding reserved pasta water a bit at a time to loosen the sauce if needed.

    • Gently fold in the salmon chunks.

  5. Serve:

    • Garnish with parsley and a squeeze of lemon juice.

    • Top with extra parmesan or chili flakes if you like it bold.
