Creamy Cucumber Shrimp Salad

Here’s a simple and delicious recipe for a Creamy Cucumber Shrimp Salad:

Ingredients:

  • 1 lb cooked shrimp (peeled and deveined)
  • 1 large cucumber, thinly sliced
  • 1/4 red onion, finely chopped (optional)
  • 1/2 cup Greek yogurt (or sour cream)
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • 1-2 tbsp fresh dill (or 1 tsp dried dill)
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (optional)

Instructions:

  1. Prepare the shrimp: If your shrimp are not cooked, you can quickly boil them in salted water for 2-3 minutes until they turn pink, then drain and cool them. Alternatively, you can use pre-cooked shrimp.

  2. Prepare the cucumber: Slice the cucumber thinly. If you’d like, you can remove the seeds by slicing the cucumber in half lengthwise and scooping them out with a spoon. This can help keep the salad from being too watery.

  3. Make the creamy dressing: In a large bowl, combine the Greek yogurt, mayonnaise, Dijon mustard, lemon juice, garlic powder, dill, salt, and pepper. Stir well until everything is evenly mixed.

  4. Assemble the salad: Add the cooked shrimp and sliced cucumber to the bowl with the creamy dressing. Toss gently to coat everything evenly.

  5. Garnish: If you’d like, sprinkle with fresh parsley for a pop of color and added flavor.

  6. Serve: Serve immediately, or refrigerate for about 30 minutes to let the flavors meld together. This salad is also great served on a bed of greens or with crackers.
