Creamy Crockpot Beef Tips & Mushrooms

Ingredients:

  • 2 lbs beef stew meat or sirloin tips, cubed

  • 1 tablespoon olive oil

  • 1 small onion, chopped

  • 3 cloves garlic, minced

  • 8 oz mushrooms, sliced (button or cremini)

  • 1 can (10.5 oz) cream of mushroom soup

  • 1 cup beef broth

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • 1/2 teaspoon thyme (optional)

  • Salt & pepper, to taste

  • 1/2 cup sour cream (add at the end)

  • Fresh parsley, for garnish (optional)


Instructions:

  1. Sear the Beef (Optional but Recommended):
    In a skillet, heat olive oil over medium-high heat. Brown the beef tips on all sides, then transfer to the crockpot.

  2. Layer the Ingredients:
    Add chopped onions, garlic, and sliced mushrooms over the beef.

  3. Mix the Sauce:
    In a bowl, whisk together the cream of mushroom soup, beef broth, Worcestershire sauce, onion powder, garlic powder, thyme, salt, and pepper. Pour over the beef and vegetables in the crockpot.

  4. Cook:

    • Low: 6–8 hours

    • High: 3–4 hours
      Cook until the beef is fork-tender.

  5. Finish with Creaminess:
    Stir in the sour cream about 15 minutes before serving. Let it warm through without boiling.

  6. Serve:
    Serve over egg noodles, mashed potatoes, or rice. Garnish with fresh parsley if desired.
