CREAMY CHICKEN TAQUITOS

Sure, here’s a simple recipe for creamy chicken taquitos:

Ingredients:

  • 2 cups shredded cooked chicken (you can use rotisserie chicken or cook and shred chicken breasts)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/4 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup salsa (adjust to taste)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 12-16 small flour tortillas
  • Cooking spray or olive oil, for brushing

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the shredded chicken, shredded cheese, cream cheese, sour cream, salsa, chili powder, cumin, garlic powder, salt, and pepper. Mix until well combined.
  3. Warm the flour tortillas in the microwave for a few seconds to make them pliable.
  4. Place about 2 tablespoons of the chicken mixture onto each tortilla, spreading it in a line along one edge.
  5. Roll up the tortillas tightly, starting from the edge with the chicken mixture. Place them seam side down on a baking sheet lined with parchment paper or aluminum foil.
  6. Lightly brush the taquitos with cooking spray or olive oil to help them crisp up in the oven.
  7. Bake in the preheated oven for about 15-20 minutes or until the taquitos are golden brown and crispy.
  8. Serve hot with your favorite dipping sauces such as salsa, guacamole, or sour cream.
