Creamy Chicken Alfredo Lasagna Rolls

Here’s a recipe for Creamy Chicken Alfredo Lasagna Rolls, a delicious twist on traditional lasagna that combines the flavors of creamy Alfredo sauce with tender chicken and lasagna noodles.

Ingredients

For the Alfredo Sauce:

  • 1/2 cup unsalted butter
  • 2 cups heavy cream
  • 4 cloves garlic, minced
  • 1 1/2 cups grated Parmesan cheese
  • Salt and pepper to taste

For the Filling:

  • 2 cups cooked chicken, shredded (rotisserie chicken works well)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

For the Lasagna Rolls:

  • 12 lasagna noodles, cooked according to package instructions
  • 1 1/2 cups shredded mozzarella cheese (for topping)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

Making the Alfredo Sauce:

  1. In a medium saucepan over medium heat, melt the butter.
  2. Add minced garlic and sauté until fragrant (about 1 minute).
  3. Stir in the heavy cream and bring to a simmer.
  4. Reduce heat to low and gradually whisk in the Parmesan cheese until the sauce is smooth and thickened.
  5. Season with salt and pepper to taste. Remove from heat and set aside.

Preparing the Filling:

  1. In a large bowl, combine shredded chicken, ricotta cheese, mozzarella cheese, Parmesan cheese, beaten egg, parsley, garlic powder, salt, and pepper.
  2. Mix until all ingredients are well incorporated.

Assembling the Lasagna Rolls:

  1. Preheat your oven to 375°F (190°C).
  2. Spread a thin layer of Alfredo sauce on the bottom of a 9×13-inch baking dish.
  3. Lay out the cooked lasagna noodles on a clean surface. Spread a generous amount of the chicken and cheese filling evenly over each noodle.
  4. Carefully roll up each noodle and place it seam-side down in the prepared baking dish.
  5. Pour the remaining Alfredo sauce over the lasagna rolls.
  6. Sprinkle the top with the shredded mozzarella cheese.

Baking:

  1. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  2. Remove the foil and bake for an additional 10-15 minutes, or until the cheese on top is melted and bubbly.
  3. If desired, broil for 2-3 minutes to achieve a golden-brown top.

Serving:

  1. Remove from the oven and let it rest for a few minutes.
  2. Garnish with chopped fresh parsley if desired.
  3. Serve hot and enjoy!
