A creamy apple pie cake sounds delicious! Here’s a recipe for a creamy apple pie cake that combines the flavors of apple pie with the moist texture of a cake. It’s perfect for a cozy dessert!

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream

For the Apple Filling:

  • 3 cups peeled and diced apples (about 2-3 medium apples, such as Granny Smith or Honeycrisp)
  • 1 tbsp lemon juice
  • 1/2 tsp ground cinnamon
  • 2 tbsp granulated sugar
  • 2 tbsp unsalted butter

For the Creamy Filling:

  • 8 oz cream cheese (softened)
  • 1/4 cup powdered sugar
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract

For the Topping:

  • 1/4 cup brown sugar
  • 1/4 cup chopped pecans (optional)

Instructions:

Step 1: Make the Apple Filling

  1. In a large pan, melt the butter over medium heat.
  2. Add the diced apples, cinnamon, sugar, and lemon juice.
  3. Cook for about 5-7 minutes until the apples soften and release their juices. Stir occasionally, then set aside to cool.

Step 2: Prepare the Cake Batter

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat the butter and granulated sugar together until light and fluffy, about 3-5 minutes.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients, alternating with the sour cream. Start and end with the dry ingredients. Mix until just combined.

Step 3: Assemble the Cake

  1. Pour half of the cake batter into the prepared cake pan.
  2. Spread the cooled apple filling over the batter.
  3. Top with the remaining cake batter and smooth it out.
  4. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan.

Step 4: Make the Creamy Filling

  1. In a medium bowl, beat the softened cream cheese until smooth.
  2. Add the powdered sugar, vanilla extract, and heavy cream. Beat until the mixture is smooth and creamy.
  3. Chill the creamy filling in the fridge for at least 30 minutes before serving.

Step 5: Assemble the Final Cake

  1. Once the cake has cooled, spread the creamy filling over the top of the cake.
  2. For extra crunch and sweetness, sprinkle with brown sugar and chopped pecans if desired.

Step 6: Serve

Slice and enjoy this creamy apple pie cake with a scoop of vanilla ice cream or whipped cream for extra indulgence!
