Creamed Spinach & Mushroom Smothered Chicken is a delicious and savory dish that combines the flavors of tender chicken, creamy spinach, and savory mushrooms. Here’s a simple recipe for you to try:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup baby spinach, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook until browned on both sides and cooked through (about 6-7 minutes per side). Remove the chicken from the skillet and set aside.
  3. In the same skillet, add butter and sliced mushrooms. Sauté the mushrooms until they release their moisture and become golden brown.
  4. Add minced garlic and chopped spinach to the skillet. Cook until the spinach wilts.
  5. Pour in the heavy cream, grated Parmesan cheese, dried thyme, onion powder, and garlic powder. Stir well to combine.
  6. Place the cooked chicken breasts back into the skillet, spooning some of the creamed spinach and mushroom mixture over the top.
  7. Let the chicken simmer in the sauce for a few minutes until everything is heated through and well combined.
  8. Garnish with chopped fresh parsley if desired.

Serve the Creamed Spinach & Mushroom Smothered Chicken over rice, pasta, or with a side of vegetables for a complete and satisfying meal. Enjoy!
