CRAB STUFFED CHEDDAR BAY BISCUIT WITH A LEMON BUTTER SAUCE

Ingredients for the Cheddar Bay Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1 cup shredded cheddar cheese
  • 3/4 cup buttermilk
  • 1/4 cup sour cream
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup melted butter

Ingredients for the Crab Stuffing:

  • 1 pound lump crab meat, picked over for shells
  • 1/2 cup mayonnaise
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped red bell pepper
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Old Bay seasoning
  • Salt and pepper to taste

Ingredients for the Lemon Butter Sauce:

  • 1/2 cup unsalted butter
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the cheddar cheese.
  3. In a separate bowl, combine the buttermilk, sour cream, garlic powder, onion powder, and chopped parsley. Add this mixture to the dry ingredients and stir until just combined.
  4. Drop spoonfuls of the biscuit dough onto the prepared baking sheet. Bake for 12-15 minutes, or until the biscuits are golden brown.
  5. While the biscuits are baking, prepare the crab stuffing. In a bowl, gently mix together the lump crab meat, mayonnaise, celery, red bell pepper, Dijon mustard, lemon juice, Old Bay seasoning, salt, and pepper.
  6. For the lemon butter sauce, melt the butter in a small saucepan over low heat. Stir in the fresh lemon juice, lemon zest, salt, and pepper.
  7. To assemble, split the baked Cheddar Bay biscuits in half. Spoon the crab stuffing onto the bottom half of each biscuit, then drizzle with the lemon butter sauce. Place the top half of the biscuit back on top.
  8. Serve the crab-stuffed Cheddar Bay biscuits with the lemon butter sauce on the side for dipping.
