🧾 Ingredients:
For the Salmon:

4 salmon fillets (skinless, 6–8 oz each)

Salt & black pepper, to taste

1 tablespoon olive oil

1 lemon, thinly sliced (for garnish)
For the Seafood Stuffing:

½ cup cooked shrimp, finely chopped

½ cup lump crab meat (drain well, check for shells)

2 tablespoons cream cheese, softened
-
2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 garlic clove, minced

1 tablespoon lemon juice
-
1 tablespoon chopped parsley (or dill)

¼ cup shredded Parmesan cheese

¼ cup breadcrumbs (Panko or regular)

Salt & pepper, to taste

Optional: pinch of Old Bay or Cajun seasoning

Preheat oven to 375°F (190°C). Line a baking dish with parchment or lightly grease.

Make the stuffing:
In a bowl, combine shrimp, crab, cream cheese, mayo, mustard, garlic, lemon juice, herbs, Parmesan, breadcrumbs, and seasoning. Mix until well combined and creamy. -
Prepare the salmon:
Pat the fillets dry. Use a sharp knife to cut a slit in the center of each fillet (not all the way through) to create a pocket. -
Stuff the salmon:
Spoon the seafood mixture generously into each pocket. You can mound a bit on top if needed. -
Season & bake:
Drizzle olive oil over salmon. Season with salt and pepper. Bake uncovered for 20–25 minutes, or until salmon is flaky and internal temp reaches 145°F (63°C). -
