Cowboy Stew with Potatoes and Meatloaf Recipe

Ingredients:

For the Cowboy Stew:

  • 1 lb ground beef (or sausage, if you prefer)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 medium potatoes, peeled and diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 4 cups beef broth (or chicken broth)
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

For the Meatloaf:

  • 1 lb ground beef (or a mix of beef and pork)
  • 1 small onion, finely chopped
  • 1/2 cup breadcrumbs (or oats for a healthier twist)
  • 1/4 cup milk
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1/4 cup ketchup (for topping)
  • 1 tablespoon brown sugar (optional for a sweeter glaze)

Instructions:

1. Prepare the Meatloaf:

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the ground beef, onion, breadcrumbs, milk, egg, Worcestershire sauce, garlic powder, salt, and pepper. Mix everything until well incorporated.
  • Form the meat mixture into a loaf shape and place it on a greased baking sheet or in a loaf pan.
  • For the glaze: Mix ketchup and brown sugar (if using) together, and spread it over the top of the meatloaf.
  • Bake for 1 hour, or until the meatloaf reaches an internal temperature of 160°F (71°C). Once done, set aside and let it rest.

2. Prepare the Cowboy Stew:

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for 2-3 minutes, until fragrant.
  • Add the ground beef (or sausage) to the pot, breaking it apart with a spoon. Cook until browned and fully cooked through.
  • Stir in the diced potatoes, diced tomatoes, kidney beans, corn, smoked paprika, chili powder, cumin, salt, and pepper.
  • Pour in the beef broth and bring the stew to a boil. Once boiling, reduce the heat to a simmer, cover, and cook for about 25-30 minutes, or until the potatoes are tender and the flavors are well combined. Stir occasionally to prevent sticking.

3. Serve:

  • Slice the meatloaf into thick slices.
  • Serve the cowboy stew with potatoes in bowls, topped with a slice of meatloaf on the side.

Tips:

  • You can substitute the ground beef for ground turkey or chicken for a lighter option.
  • Add extra vegetables like bell peppers, carrots, or celery to the stew for more flavor and nutrition.
  • For extra spice, add a diced jalapeño pepper to the stew or sprinkle chili flakes on top.
