Here’s a rich and indulgent Cookies and Cream Cheesecake Tower recipe — perfect for a special occasion or a show-stopping dessert!


🍪 Cookies and Cream Cheesecake Tower

Ingredients

For the Crust (Bottom Layer):

  • 24 Oreo cookies (crushed)

  • 1/4 cup (60g) melted butter

For the Cheesecake Layers:

  • 3 x 8oz (680g) packages cream cheese, softened

  • 1 cup (200g) granulated sugar

  • 1 tsp vanilla extract

  • 3 large eggs

  • 1/2 cup (120ml) sour cream

  • 1/4 cup (60ml) heavy cream

  • 10 Oreo cookies, chopped

For the Cookies & Cream Mousse (Middle Layer):

  • 1 cup (240ml) heavy whipping cream

  • 1/4 cup (30g) powdered sugar

  • 4 oz (115g) cream cheese, softened

  • 6 crushed Oreo cookies

For the Ganache (Top Drip):

  • 1/2 cup (120ml) heavy cream

  • 4 oz (115g) semi-sweet chocolate chips

Decoration (Optional but encouraged):

  • Mini Oreos

  • Crushed Oreos

  • Whipped cream

  • Oreo halves or shards


🧁 Instructions

1. Make the Crust:

  1. Preheat oven to 325°F (163°C).

  2. Mix crushed Oreos and melted butter. Press into the base of a tall springform pan (or cake ring if stacking).

  3. Bake for 8–10 minutes. Cool slightly.

2. Prepare the Cheesecake:

  1. Beat cream cheese until smooth. Add sugar and vanilla.

  2. Add eggs one at a time, beating on low. Stir in sour cream and heavy cream.

  3. Fold in chopped Oreos.

  4. Pour onto crust and bake in a water bath at 300°F (150°C) for 60–70 minutes until center is just set.

  5. Cool in oven with door cracked, then refrigerate at least 4 hours (preferably overnight).

3. Make the Mousse Layer:

  1. Beat cream cheese until smooth.

  2. In another bowl, whip cream and powdered sugar to stiff peaks.

  3. Fold cream into cream cheese, then fold in crushed Oreos.

  4. Spread mousse over chilled cheesecake. Refrigerate for at least 2 hours to set.

4. Ganache Drip:

  1. Heat cream until just simmering. Pour over chocolate chips.

  2. Let sit 2 mins, stir until smooth.

  3. Cool slightly and pour over the mousse layer to drip down the sides.

5. Assemble & Decorate:

  • Stack layers if baking separately (e.g., cheesecake, mousse, ganache).

  • Top with whipped cream, mini Oreos, or crushed Oreo dust.

  • Chill until ready to serve.


🥄 Tips:

  • For a tower effect, use multiple tiers of cheesecake layers, alternating with mousse or Oreo whipped cream.

  • A cake ring or acetate strips help keep layers clean and tall.

  • Freeze layers for 20–30 mins before stacking to prevent sliding.
