Coconut cake is a delicious dessert that features the tropical flavor of coconut. Here’s a basic recipe for a classic coconut cake:

Ingredients:

For the cake:

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup coconut milk
  • 1 cup sweetened shredded coconut

For the frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup coconut milk
  • 1 teaspoon vanilla extract
  • 2 cups sweetened shredded coconut (for decorating)

Instructions:

1. Preheat the oven:

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. Prepare the cake:

  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the coconut milk. Begin and end with the dry ingredients. Mix until just combined.
  • Fold in the sweetened shredded coconut.

3. Bake the cake:

  • Divide the batter evenly between the prepared pans and smooth the tops.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

4. Prepare the frosting:

  • In a large mixing bowl, beat the softened butter until creamy.
  • Gradually add the powdered sugar, coconut milk, and vanilla extract. Beat until smooth and creamy.

5. Frost the cake:

  • Once the cakes are completely cool, spread a layer of frosting on top of one cake layer. Place the second cake layer on top and frost the top and sides of the entire cake.

6. Decorate with coconut:

  • Sprinkle the sweetened shredded coconut over the top and sides of the frosted cake.

7. Serve and enjoy:

  • Slice the coconut cake and serve. Enjoy the delicious tropical flavor!
