Cloud Cake Recipe

Ingredients:

For the Cake:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk
  • 5 large eggs, separated
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cream of tartar (optional, helps with fluffiness)
  • Powdered sugar (for dusting)

For the Whipped Cream (Optional topping):

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.
  2. Mix the dry ingredients:
    • In a small bowl, sift together the flour, baking powder, and salt. Set aside.
  3. Prepare the wet ingredients:
    • In a large mixing bowl, beat the egg yolks and sugar together until they become light and creamy.
    • Add the softened butter, milk, and vanilla extract, and continue mixing until smooth.
    • Gradually fold in the dry ingredients until fully incorporated.
  4. Beat the egg whites:
    • In a separate clean bowl, beat the egg whites (with cream of tartar, if using) with an electric mixer on medium speed until stiff peaks form.
  5. Combine the mixtures:
    • Gently fold the beaten egg whites into the cake batter in small additions. Use a rubber spatula and fold the mixture carefully to retain the airiness.
  6. Bake the cake:
    • Pour the batter into the prepared cake pan. Smooth the top with a spatula.
    • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. The cake should be golden brown on top and have risen beautifully.
  7. Cool the cake:
    • Allow the cake to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
  8. Make the whipped cream (optional):
    • In a chilled mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  9. Serve:
    • Once the cake has cooled, you can either dust the top with powdered sugar or spread a layer of whipped cream. For an extra touch, you can decorate with fresh berries or fruit.
