Ingredients:

  • 2 ripe bananas, mashed
  • 1/3 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats (gluten-free if necessary)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mash Bananas: In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth.
  3. Add Wet Ingredients: Add melted coconut oil and vanilla extract to the mashed bananas. Mix well to combine.
  4. Combine Dry Ingredients: In a separate bowl, combine rolled oats, baking soda, cinnamon, and salt.
  5. Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until everything is well combined.
  6. Add Walnuts: Gently fold in the chopped walnuts into the cookie dough.
  7. Form Cookies: Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them apart.
  8. Flatten Cookies (Optional): If you prefer a flatter cookie shape, you can gently flatten each cookie with the back of a spoon.
  9. Bake: Bake in the preheated oven for about 12-15 minutes or until the edges are golden brown.
  10. Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
