Cinnamon Sugar French Toast Muffins are a delightful twist on the classic French toast, combining the flavors of cinnamon and sugar with the convenience of a muffin. Here’s a simple recipe to make them:

Ingredients

For the muffins:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1 cup milk
  • 1/2 cup butter, melted
  • 2 tsp vanilla extract
  • 2 large eggs

For the cinnamon sugar coating:

  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/4 cup butter, melted

Instructions

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line it with muffin liners.
  2. Mix Dry Ingredients:
    • In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  3. Mix Wet Ingredients:
    • In another bowl, mix the milk, melted butter, vanilla extract, and eggs until well combined.
  4. Combine Ingredients:
    • Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  5. Fill Muffin Tin:
    • Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake:
    • Bake for 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Prepare Coating:
    • While the muffins are baking, mix the sugar and cinnamon in a small bowl. Melt the butter in another bowl.
  8. Coat Muffins:
    • Once the muffins are done baking, let them cool in the pan for about 5 minutes. Then, dip each muffin top into the melted butter, followed by the cinnamon sugar mixture, coating well.
  9. Cool and Serve:
    • Place the coated muffins on a wire rack to cool completely. Serve and enjoy!
