Cinnamon Apple Cake

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream

For the Apple Filling:

  • 2 cups peeled, cored, and chopped apples (about 2 medium apples)
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

For the Streusel Topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 teaspoon ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or springform pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, and then add the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream. Begin and end with the dry ingredients, mixing until just combined. Do not overmix.
  6. In a separate bowl, mix together the chopped apples, granulated sugar, and ground cinnamon for the apple filling.
  7. Spread half of the cake batter into the prepared pan. Top with the apple filling, spreading it evenly.
  8. Carefully spread the remaining cake batter over the apple filling.
  9. For the streusel topping, combine the flour, granulated sugar, cold cubed butter, and ground cinnamon. Use your fingers or a fork to mix until crumbly. Sprinkle the streusel evenly over the cake batter.
  10. Bake in the preheated oven for about 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  11. Once baked, remove the cake from the oven and allow it to cool in the pan for about 15 minutes. Then, remove the cake from the pan and transfer it to a wire rack to cool completely.
  12. Slice and serve the cinnamon apple cake as a delightful dessert or snack. You can also dust the top with powdered sugar or serve it with a scoop of vanilla ice cream, if desired.
