Chocolate wafers with cream

Here’s a recipe for homemade chocolate wafers with cream filling:

Ingredients

For the Chocolate Wafers:

  • 1 cup (125g) all-purpose flour
  • 1/2 cup (50g) cocoa powder (unsweetened)
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (55g) brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Cream Filling:

  • 1/2 cup (115g) unsalted butter, softened
  • 1 1/2 cups (190g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons heavy cream or milk (as needed)

Instructions

Chocolate Wafers:

  1. Prepare the Dough:
    • In a bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
    • In a separate large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.
    • Add the egg and vanilla extract to the butter mixture and beat until well combined.
    • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  2. Shape and Chill:
    • Divide the dough in half, shaping each half into a log (about 2 inches in diameter). Wrap each log in plastic wrap and refrigerate for at least 1 hour or until firm.
  3. Bake:
    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • Slice the chilled dough into 1/4-inch thick rounds and place them on the prepared baking sheet.
    • Bake for 10-12 minutes or until the edges are set.
    • Allow the wafers to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Cream Filling:

  1. Prepare the Filling:
    • In a large bowl, beat the softened butter until creamy.
    • Gradually add the powdered sugar, beating until smooth and fluffy.
    • Mix in the vanilla extract.
    • Add heavy cream or milk, one tablespoon at a time, until the filling reaches a spreadable consistency.
  2. Assemble the Cookies:
    • Once the wafers are completely cool, spread a generous amount of cream filling on the flat side of one wafer.
    • Top with another wafer to create a sandwich.
    • Repeat with the remaining wafers.
  3. Serve:
    • Enjoy the chocolate wafer cookies immediately, or store them in an airtight container for up to a week.

Tips:

  • For an extra touch, you can dip half of each assembled cookie in melted chocolate and let it harden for a decorative look.
  • The dough logs can be frozen for up to 3 months. When ready to bake, slice and bake directly from the freezer, adding a couple of extra minutes to the baking time.
