Chocolate Twinkie Cake

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the Filling:

  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

For the Chocolate Ganache:

  • 1 cup heavy cream
  • 8 ounces semisweet chocolate, finely chopped

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Prepare the Cake Batter:
    • In a large mixing bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
    • Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat the mixture on medium speed for about 2 minutes, until well combined.
    • Gradually stir in the boiling water. The batter will be thin, but that’s okay.
  3. Bake the Cakes:
    • Divide the batter evenly between the prepared cake pans.
    • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
    • Remove the cakes from the oven and let them cool in the pans for about 10 minutes, then transfer them to wire racks to cool completely.
  4. Prepare the Filling:
    • In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. This will be the filling for the cake.
  5. Assemble the Cake:
    • Once the cakes are completely cooled, place one cake layer on a serving plate.
    • Spread the whipped cream filling evenly over the cake layer.
    • Place the second cake layer on top of the filling.
  6. Make the Chocolate Ganache:
    • In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer. Do not let it boil.
    • Remove the saucepan from heat and add the finely chopped chocolate. Let it sit for a minute to melt, then whisk until smooth and glossy.
  7. Pour the Ganache:
    • Pour the chocolate ganache over the top of the cake, allowing it to drip down the sides.
  8. Chill the Cake:
    • Place the cake in the refrigerator for about 1 hour to allow the ganache to set.
  9. Serve:
    • Once the ganache is set, slice and serve your homemade Chocolate Twinkie Cake!
