For the Cookie Dough (egg-free):

  • 1/2 cup (1 stick) unsalted butter, softened

  • 1/2 cup brown sugar

  • 1/4 cup granulated sugar

  • 2 tbsp milk

  • 1 tsp vanilla extract

  • 1 1/4 cups all-purpose flour (heat-treated – see note)

  • 1/2 tsp salt

  • 3/4 cup mini chocolate chips

For the Brownies:

  • 1 box brownie mix (plus ingredients listed on the box) or homemade brownies

  • Bake in a 9×13 pan and let cool completely

For the Chocolate Coating:

  • 2 cups semisweet or milk chocolate chips

  • 1 tbsp coconut oil or shortening (optional, for smoother dipping)

Step 1: Make the Brownies

  1. Prepare brownies according to box or recipe directions in a 9×13-inch pan.

  2. Let cool completely. Cut into 1-inch squares (or just crumble into small chunks if you want to press them around the dough).

Step 2: Make the Cookie Dough

  1. In a bowl, cream the softened butter and both sugars until light and fluffy.

  2. Add in milk and vanilla extract; mix well.

  3. Stir in heat-treated flour and salt until combined.

  4. Fold in mini chocolate chips.

  5. Roll into 1-inch balls and place on a lined tray. Freeze for 30 minutes.

Step 3: Assemble the Bombs

  1. Flatten a piece of brownie and wrap it around the chilled cookie dough ball, fully covering it.

  2. Repeat with all dough balls and freeze the brownie-covered balls for 1 hour.

Step 4: Dip in Chocolate

  1. Melt chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.

  2. Dip each bomb in the melted chocolate using a fork, letting the excess drip off.

  3. Place on a parchment-lined tray and chill until set.
