Chocolate Caramel Cake with Cream Cheese Frosting

Ingredients:

For the cake:

  • 2 cups all-purpose flour
  • 3/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1/2 cup hot water

For the caramel sauce:

  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, cut into pieces
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the cream cheese frosting:

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until well combined.
  6. Stir in the hot water until the batter is smooth.
  7. Divide the batter evenly among the prepared cake pans.
  8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  9. While the cakes are baking, make the caramel sauce. In a medium saucepan, heat the sugar over medium-high heat, stirring constantly with a whisk until it melts and turns a deep amber color.
  10. Add the butter and stir until melted.
  11. Slowly pour in the heavy cream while whisking continuously. Be careful as the mixture will bubble up.
  12. Remove from heat and stir in the vanilla extract and salt. Let the caramel sauce cool completely.
  13. To make the cream cheese frosting, beat together the cream cheese and butter until smooth and creamy.
  14. Gradually add the powdered sugar and vanilla extract, beating until light and fluffy.
  15. Once the cakes have cooled, assemble the cake by spreading a layer of caramel sauce between each layer of cake.
  16. Frost the top and sides of the cake with the cream cheese frosting.
  17. Drizzle additional caramel sauce over the top of the cake for decoration, if desired.
