Chipotle Beef & Pasta Skillet

Sure, here’s a recipe for a delicious Chipotle Beef & Pasta Skillet:

Ingredients:

  • 1 lb (450g) ground beef
  • 2 cups (about 200g) of your favorite pasta (penne, rotini, or fusilli work well)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 can (14 oz) diced tomatoes
  • 2-3 chipotle peppers in adobo sauce, chopped (adjust to taste)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup (240ml) beef broth
  • 1 cup (150g) corn kernels (fresh, frozen, or canned)
  • 1 cup (150g) black beans, drained and rinsed
  • 1 cup (100g) shredded cheddar cheese
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, cook the ground beef over medium-high heat until browned and cooked through. Remove any excess fat.
  3. Add the chopped onion, minced garlic, and chopped red bell pepper to the skillet. Cook until the vegetables are softened, about 3-4 minutes.
  4. Stir in the diced tomatoes, chopped chipotle peppers, ground cumin, smoked paprika, salt, and pepper. Cook for another 2-3 minutes to allow the flavors to meld together.
  5. Pour in the beef broth and bring the mixture to a simmer. Let it cook for 5 minutes, stirring occasionally.
  6. Add the cooked pasta, corn kernels, and black beans to the skillet. Stir until everything is well combined and heated through.
  7. Sprinkle the shredded cheddar cheese over the top of the skillet. Cover and let it sit for a few minutes until the cheese is melted and bubbly.
  8. Remove from heat and garnish with chopped cilantro. Serve hot with lime wedges on the side for squeezing over the skillet before eating.
