Chicken with Spinach and Mushrooms in Creamy Parmesan Sauce

Here’s a delicious recipe for Chicken with Spinach and Mushrooms in Creamy Parmesan Sauce:

Ingredients:

  • For the chicken:
    • 4 boneless, skinless chicken breasts
    • Salt and black pepper, to taste
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 2 tablespoons olive oil
  • For the sauce:
    • 2 tablespoons butter
    • 8 oz mushrooms, sliced
    • 3 cloves garlic, minced
    • 1 cup chicken broth
    • 1 cup heavy cream
    • 1 cup grated Parmesan cheese
    • 3 cups fresh spinach
    • Salt and black pepper, to taste

Instructions:

  1. Prepare the Chicken:
    • Season the chicken breasts with salt, pepper, garlic powder, and onion powder on both sides.
    • Heat the olive oil in a large skillet over medium-high heat.
    • Add the chicken breasts to the skillet and cook for about 5-7 minutes on each side, or until they are golden brown and cooked through.
    • Remove the chicken from the skillet and set aside.
  2. Make the Sauce:
    • In the same skillet, melt the butter over medium heat.
    • Add the sliced mushrooms and cook until they are tender and browned, about 5 minutes.
    • Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
    • Pour in the chicken broth and heavy cream, stirring to combine.
    • Bring the mixture to a simmer and let it cook for about 5 minutes, allowing the sauce to thicken slightly.
    • Stir in the grated Parmesan cheese until it melts and the sauce is smooth.
    • Add the fresh spinach and cook until it wilts, about 2-3 minutes.
    • Season the sauce with salt and black pepper to taste.
  3. Combine and Serve:
    • Return the cooked chicken breasts to the skillet, spooning some of the sauce over the top.
    • Let the chicken simmer in the sauce for a few minutes to reheat and absorb the flavors.
    • Serve the chicken with the creamy Parmesan sauce, mushrooms, and spinach over your choice of side (pasta, rice, or mashed potatoes work well).

Tips:

  • For extra flavor, you can add a splash of white wine to the sauce along with the chicken broth.
  • If you prefer a thicker sauce, you can add a slurry made of 1 tablespoon cornstarch mixed with 2 tablespoons cold water and stir it into the sauce while simmering.
  • Garnish with fresh parsley or extra Parmesan cheese for a nice touch.
