Chicken Spring Rolls

Ingredients:

For the Filling:
  • 2 cups cooked chicken breast, shredded
  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 1/2 cup bean sprouts
  • 1/4 cup green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tsp sesame oil
  • 1 tsp ginger, grated
  • Salt and pepper to taste
For the Spring Rolls:
  • 12-15 spring roll wrappers
  • 1 egg, beaten (for sealing the rolls)
  • Oil for frying

Instructions:

  1. Prepare the Filling:
    • Heat a large skillet or wok over medium heat.
    • Add a small amount of oil and sauté the garlic and ginger until fragrant.
    • Add the shredded chicken, cabbage, carrots, and bean sprouts. Stir-fry for about 3-4 minutes until the vegetables are slightly softened.
    • Stir in the soy sauce, oyster sauce, hoisin sauce, and sesame oil. Cook for another 2-3 minutes, mixing well to ensure the ingredients are well combined.
    • Add the green onions and season with salt and pepper to taste. Remove from heat and let the filling cool slightly.
  2. Assemble the Spring Rolls:
    • Lay a spring roll wrapper on a clean surface with one corner pointing towards you (it should look like a diamond shape).
    • Place about 2 tablespoons of the filling near the bottom corner of the wrapper.
    • Fold the bottom corner over the filling, then fold in the two side corners, and roll up tightly. Brush the top corner with a little beaten egg to seal the roll. Repeat with remaining wrappers and filling.
  3. Fry the Spring Rolls:
    • Heat oil in a deep fryer or a large, deep skillet to 350°F (175°C).
    • Carefully add the spring rolls in batches, being sure not to overcrowd the pan.
    • Fry until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.
  4. Serve:
    • Serve hot with your favorite dipping sauce, such as sweet chili sauce, soy sauce, or a peanut dipping sauce.

Tips:

  • Make sure the filling is not too wet, as this can make the spring rolls soggy.
  • You can also bake the spring rolls at 400°F (200°C) for about 15-20 minutes, turning halfway through, for a healthier option.
  • Feel free to customize the filling with other vegetables or proteins to your liking.
