Chicken Salad Croissant Sandwiches

Chicken salad croissant sandwiches are a delicious and versatile dish that can be enjoyed for lunch, brunch, or a light dinner. Here’s a simple recipe to make them:

Ingredients:

  • 2 cups cooked chicken, diced or shredded
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt (or sour cream)
  • 1 stalk celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup grapes, halved (optional)
  • 1/4 cup chopped pecans or almonds (optional)
  • Salt and pepper to taste
  • Fresh lettuce leaves
  • Croissants, sliced

Instructions:

  1. Prepare the Chicken: Cook chicken breasts in boiling water or bake in the oven until fully cooked. Let it cool, then dice or shred it.
  2. Make the Chicken Salad: In a large mixing bowl, combine the cooked chicken, mayonnaise, Greek yogurt (or sour cream), chopped celery, chopped red onion, halved grapes (if using), and chopped nuts (if using). Mix well until all ingredients are evenly coated.
  3. Season: Season the chicken salad with salt and pepper to taste. Adjust the seasoning according to your preference.
  4. Assemble the Sandwiches: Slice the croissants in half horizontally. Place a leaf of lettuce on the bottom half of each croissant. Spoon a generous amount of chicken salad onto the lettuce. Top with the other half of the croissant.
  5. Serve: Arrange the sandwiches on a platter and serve immediately. You can serve them as is or accompany them with your favorite side dishes such as potato chips, fresh fruit, or a green salad.
