CHICKEN QUESADILLA RECIPE

Certainly! Here’s a simple recipe for chicken quesadillas:

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 cups shredded Mexican blend cheese
  • Optional toppings: sour cream, salsa, guacamole, chopped cilantro

Instructions:

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and sliced bell pepper. Cook until softened, about 3-5 minutes.
  2. Add minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
  3. Add the shredded chicken to the skillet and season with ground cumin, chili powder, paprika, salt, and pepper. Stir to combine and cook for another 2-3 minutes until the chicken is heated through and well-coated with the spices.
  4. In a separate non-stick skillet or on a griddle, place one tortilla. Sprinkle a layer of shredded cheese on one half of the tortilla.
  5. Spoon a portion of the chicken mixture over the cheese layer.
  6. Add another layer of cheese on top of the chicken mixture.
  7. Fold the tortilla in half, covering the filling, and press down gently.
  8. Cook the quesadilla for 2-3 minutes on each side or until the tortilla is golden brown and the cheese is melted.
  9. Repeat the process for the remaining tortillas and filling.
  10. Once cooked, remove the quesadillas from the skillet and let them cool for a minute before slicing into wedges.
  11. Serve the chicken quesadillas with your favorite toppings like sour cream, salsa, guacamole, or chopped cilantro.
