Chicken Dumpling Casserole with Veggies is a comforting and hearty dish that combines tender chicken, savory vegetables, and fluffy dumplings baked together in a creamy sauce. Here’s a basic recipe to get you started:

Ingredients:

  • 2 cups cooked chicken, shredded or diced
  • 2 cups mixed vegetables (such as carrots, peas, and corn)
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 cup chicken broth
  • 1 cup milk
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1/4 cup chopped fresh parsley (optional)
  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or similar size with non-stick cooking spray.
  2. In a large mixing bowl, combine the cooked chicken and mixed vegetables. Spread this mixture evenly in the prepared baking dish.
  3. In another mixing bowl, whisk together the condensed cream of chicken soup, chicken broth, and milk until smooth. Season with salt and pepper to taste. Pour this mixture evenly over the chicken and vegetables in the baking dish.
  4. In a separate bowl, combine the flour, baking powder, and salt. Stir in the melted butter until the mixture resembles coarse crumbs. If desired, mix in chopped parsley for added flavor.
  5. Drop spoonfuls of the dumpling batter evenly over the chicken and vegetable mixture in the baking dish.
  6. Bake in the preheated oven for 30-35 minutes or until the dumplings are cooked through and golden brown on top.
