Certainly! Chicken Chow Mein is a delicious Chinese stir-fried noodle dish that is easy to make at home. Here’s a simple recipe for you:

Ingredients:

  • 8 oz (225g) chow mein noodles or egg noodles
  • 1 lb (450g) boneless, skinless chicken breasts, thinly sliced
  • 2 cups (200g) shredded cabbage
  • 1 cup (100g) sliced bell peppers (any color)
  • 1 cup (100g) sliced carrots
  • 1 cup (100g) sliced mushrooms
  • 1 cup (150g) bean sprouts
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon cornstarch
  • 1/4 cup (60ml) chicken broth or water
  • 2 tablespoons vegetable oil, divided
  • Salt and pepper to taste
  • Green onions, chopped, for garnish (optional)
  • Sesame seeds, for garnish (optional)

Instructions:

  1. Cook the noodles according to the package instructions. Drain and set aside.
  2. In a small bowl, mix together soy sauce, oyster sauce, hoisin sauce, cornstarch, and chicken broth. Set aside.
  3. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the sliced chicken, season with salt and pepper, and stir-fry until cooked through. Remove the chicken from the wok and set aside.
  4. In the same wok, add another tablespoon of oil. Add garlic and ginger, and stir-fry for about 30 seconds until fragrant.
  5. Add the sliced vegetables (cabbage, bell peppers, carrots, mushrooms) to the wok and stir-fry for 3-4 minutes until they are slightly tender but still crisp.
  6. Add the bean sprouts and cooked chicken back into the wok. Pour the sauce over the mixture and stir-fry for an additional 2-3 minutes until everything is well-coated and heated through.
  7. Add the cooked noodles to the wok and toss everything together until the noodles are evenly coated with the sauce and the vegetables and chicken are distributed evenly.
  8. Garnish with chopped green onions and sesame seeds if desired.

Serve immediately and enjoy your homemade Chicken Chow Mein!
