Here’s a delicious recipe for Chicken Bell Pepper Ranch Burritos—perfect for a quick weeknight dinner or meal prep!


🌯 Chicken Bell Pepper Ranch Burritos

🥘 Ingredients:

  • 2 cups cooked chicken, shredded or diced (rotisserie works great)

  • 1 tbsp olive oil

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1/2 onion, sliced

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 1/2 tsp cumin

  • Salt and pepper, to taste

  • 1/2 cup ranch dressing (store-bought or homemade)

  • 1 cup shredded cheddar or Monterey Jack cheese

  • 4 large flour tortillas

  • Optional: cilantro, lime juice, hot sauce, or sour cream for serving


🔪 Instructions:

  1. Sauté the Veggies
    In a large skillet, heat the olive oil over medium heat. Add sliced bell peppers and onions. Cook until they’re soft and slightly caramelized (about 6-8 minutes). Season with garlic powder, paprika, cumin, salt, and pepper.

  2. Add Chicken
    Stir in the cooked chicken and let it warm through. Add the ranch dressing and mix everything well. Cook for another 2-3 minutes until heated evenly.

  3. Assemble Burritos
    Warm tortillas slightly to make them pliable. Spoon the chicken-pepper mixture onto each tortilla. Top with shredded cheese.

  4. Wrap and Toast (Optional)
    Fold the sides and roll up the burrito. For a crispy finish, toast them seam-side down in a dry skillet for 1-2 minutes per side.

  5. Serve
    Slice in half and serve with a side of sour cream, extra ranch, or your favorite salsa.
