2 large eggs

2 tsp vanilla extract
-
2 ¾ cups all-purpose flour

2 tsp cream of tartar

1 tsp baking soda
-
½ tsp salt
For the cinnamon-sugar topping:
-
¼ cup granulated sugar

1 ½ tsp ground cinnamon
Instructions:
-
Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.

Cream butter and sugars together in a large bowl until light and fluffy (about 2-3 minutes).
-
Add eggs and vanilla, and mix until fully combined.
-
In a separate bowl, whisk together flour, cream of tartar, baking soda, and salt.
-
Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
-
Spread the dough evenly into the prepared pan. (Tip: Lightly flour your hands or use parchment paper to press it down evenly.)
-
Mix the cinnamon and sugar in a small bowl, then sprinkle the mixture evenly over the top of the dough.
-
Bake for 22–26 minutes, or until the edges are set and lightly golden, but the center is still soft. Do not overbake!
-
Let cool in the pan before slicing into bars.
