Here’s a recipe for Cherry Pistachio Cream Layer Bars that you can try:

Ingredients

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar

For the Pistachio Layer:

  • 1 package (3.4 oz) instant pistachio pudding mix
  • 1 ½ cups cold milk
  • 1 cup whipped topping (like Cool Whip)

For the Cream Cheese Layer:

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup whipped topping

For the Cherry Layer:

  • 1 can (21 oz) cherry pie filling

For the Topping:

  • ½ cup chopped pistachios
  • Additional whipped topping for garnish (optional)

Instructions

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined.
    • Press the mixture into the bottom of a 9×13-inch baking dish to form an even layer.
    • Bake for 8-10 minutes until lightly golden. Remove from the oven and let it cool completely.
  2. Prepare the Pistachio Layer:
    • In a medium bowl, whisk together the pistachio pudding mix and cold milk for 2 minutes, until thickened.
    • Fold in 1 cup of whipped topping.
    • Spread the pistachio mixture over the cooled crust. Refrigerate while preparing the next layer.
  3. Prepare the Cream Cheese Layer:
    • In a large bowl, beat the softened cream cheese until smooth.
    • Gradually add the powdered sugar and beat until well combined.
    • Fold in 1 cup of whipped topping.
    • Spread the cream cheese mixture over the pistachio layer.
  4. Add the Cherry Layer:
    • Gently spread the cherry pie filling over the cream cheese layer, making sure to distribute the cherries evenly.
  5. Final Touches:
    • Sprinkle chopped pistachios over the cherry layer.
    • If desired, add additional whipped topping as a garnish on top.
  6. Chill:
    • Refrigerate the bars for at least 2 hours, or until fully set.
  7. Serve:
    • Once chilled, slice into squares and serve.
